Easy Spanish Dessert Recipes
Overview
The Spanish are known for their mouth-watering desserts, but it might surprise you to learn that they usually eat fruit for dessert and serve their delicious puddings and pastries in the morning for breakfast or at tea. These easy recipes bring the flavor of Spain to your dining room, requiring little time and effort to prepare. Each is made with common ingredients and is sure to please the palate.
Step 1
Cappuccino Cake: Cream the sugar, eggs and margarine in a large mixing bowl. Add flour and baking powder and mix thoroughly. Add the coffee and blend all ingredients together. Pour into a greased 8-by-8-inch pan. Bake for 25 to 30 minutes in a preheated oven at 180 degrees. Cool on a wire rack. To make the frosting, combine 1/2 cup confectioners' sugar with 1/4 cup of margarine and 2 teaspoons of espresso. Serve sprinkled with chocolate shavings and top with whipped cream.
Step 2
Brandy Truffles: Chop the chocolate into small sections and melt in a double boiler. Remove from heat and add cream and butter. Blend well. Add the confectioners' sugar and brandy and blend until smooth. Refrigerate for 1/2 hour. Roll into 1-inch balls and dust with cocoa powder.
Step 3
Fried Pineapple with Rum: Peel and dice the pineapple into large chunks. Stir fry the pineapple in 1 tablespoon of sunflower oil until the pineapple is a rich golden brown. Remove from heat and pour 2 tablespoons of dark rum over the pineapple. Allow the pineapple to steep in the pan juices and rum for 5 minutes. Place the pineapple in a serving bowl and drizzle with the remaining juice from the pan. Serve warm with cinnamon ice cream or plain yogurt.
Step 4
Cinnamon Ice Cream: Heat the milk, cream, sugar, lemon peel, cinnamon and cinnamon stick in a medium saucepan. Bring to a rolling boil and then reduce heat and simmer for 15 minutes. Remove the cinnamon stick and set aside to cool. Beat the egg yolks and salt in a medium bowl. Place the bowl over a pan of boiling water to thicken slightly. Remove from the heat and beat constantly until the egg mixture is cool. Add the mixture to the sugar and cream. Blend well and place in the freezer until it is slightly frozen. Remove and blend in a blender. Return the ice cream to the freezer until well-frozen and ready to serve.
