Medical professionals railed against this practice, however, and low carb eating did not take off again on a large scale until Atkins' "New Diet Revolution" became popular in the 1990s.

Ketosis, the spilling of ketone molecules into the bloodstream, is not, itself, a dangerous condition. Ketones are produced when fat is metabolized by the body for energy because of a lowered intake of glucose. This process is often confused with ketoacidosis, a potentially serious state affecting mostly Type 1 diabetics. Because insulin metabolizes ketones into glucose, nondiabetics rarely experience dangerously high levels even when on a low carb meal plan.
